Love it! November 21, 2009 Little T's Mom (colorado) All I can say is I love, love, love this book! My son cannot have gluten, eggs, or dairy. Of course, that makes baking very hard for birthdays, holiday, etc. But this book Rocks! They have simple chocolate or vanilla recipes, but they also have more "fun" ones like Margarita Cupcakes. I made those for my daughter's first birthday (she was born on Cinco de Mayo) and they were a huge hit. One guest even made them for her boss's party a couple of weeks later. Everyone raved about them.
I highly recommend this book to everyone, not just vegan/vegetarians. It is great!
I would reccomend this cookbook to EVERYONE (vegan or not) November 18, 2009 Tracy King 1 out of 1 found this review helpful
I am dairy/soy allergic, yet I crave the delicious desserts that are forbidden to me. THIS cookboook had allowed me to have EASY, tasty, dairy-free desserts and treats that regular meat-eating, dairy swilling folk try and LOVE and then can't believe that they're VEGAN!!!
What I love about this cookbook is that they give pictures of every cupcake. The book has wonderful, sometimes humorous, easy to follow directions, and most can be whipped up in about 20min, bake another 20, cool, frost and you're ready to go.
If you're vegan, you probably have all the ingredients in your kitchen already, and even if you're not, there isn't usually much to buy (except a lot more cupcake papers.)
Some recipes may need a little tweaking if like me you don't use the soy products and use rice/coconut milks instead. For instance, if using rice milk for the Coconut Pecan Frosting , use less rice milk (a technique to use also with the Chocolate Mint Cupcake frosting,) use more cornstarch, or add more shredded coconut (or a combo of all three.) Other than that, the recipies turn out perfect every time. I haven't botched a single batch, and there is a growing request list for my cupcakes.
I would say this is the cupcake book to end all cupcake books, and if you're looking for easy cake desserts with wonderful bakery-type buttercream frosting, this is the cookbook for you.
Note: I don't write reviews, but this is the only thing so far where I felt I HAD to write a one.
My baking heroes! November 17, 2009 Kristol Crawley (Manchester CT, USA) I loooooooooove this book. I'm not much of a sweet eater so when I'd seen their vegan cupcake book I thought this would be a good idea. Though I haven't tried every recipe yet I have to say every one I've tried has been fantastic. I don't know why people freak when they hear something is vegan but yes even those people drool when I mention I've got cupcakes. I've made the margarita, rosewater, peanut butter, chocoate, chocolate with oreo frosting, and vanilla cupcakes to date and I'm always impressed. The ingredients have been easy to find, the instructions easy to follow and the results are yummy! My criteria for a great cookbook!!!
Oh. My. God. November 16, 2009 M. Finan (Belleville, NJ) Let me start by saying, we are vegetarian but not vegan (we do dairy). I got this as a gift - and I am a junky now. My just turned 6 year old loves mint chocolate chip icecream. So for her birthday I made the mint chocolate cupcakes. The kids at the party scarfed down these cupcakes like there was no tomorrow. Usually I see kids eat just the icing off the top - but these kids were licking the chocolate off the cupcake wrapper!! One of the kids even said "You MADE these???? Wow!!"
This has become my new favorite cookbook. Thank you Vegan Cupcakes, for taking over my world!!!
Disappointing recipes :( November 7, 2009 A. Decker (Montreal, CA) 0 out of 2 found this review helpful
I'm not a vegan (yet) but I am trying REALLY hard to be one. I love butter, eggs, and anything that's baked using them.
After the great reviews I've been reading about this book, I thought it was worth trying their recipes. I really wanted to like this book. I dreamed of making vegan goods and giving it to my non=vegan friends.
I've done 3 so far (+2 of frosting) and sadly I've been a little disappointed. Both versions of the "yellow vanilla cupcakes" did not taste great and were too "muffiny" in texture. The peanut butter cupcakes were OK for me, but everyone else that tried them did not like them (the texture was fine though). I think maybe they're too "molassy".... I don't know.
The "to-go" buttercream was also not good. The only thing that I LOVED and plan on keeping was the "chocolate mousse" frosting. I DO NOT like "buttercream" frostings in general and this frosting (with not shortening or butter) was very good (silky, rich, consistency sturdy enough to pipe). For the price of the book (around $10) I think the book was worth it because of this recipe and because it's really made me think of alternatives to doing vegan baked goods.
I will continue trying recipes from the book and I hope I'll be rewriting this review with more positive notes!
